Ingredients - 1 Tbsp olive oil - 4 cloves carlic - 1 Tbsp grated ginger, or 1 tsp powder - 1 sweet potato - 1 medium onion - 1 tsp cumin - 1/4 tsp crushed red pepper - 6 oz tomato paste - 1/2 cup peanut butter or 1 cup chopped peanuts - 6 cups veggie broth - 6 cups chopped collard greens - cilantro (optional)
Directions - Saute ginger, garlic, onion in olive oil until soft - add cubed sweet potatoes, cumin, red pepper, saute five minutes - add remaining minus greens, boil, then simmer for 15 minutes - add greens, simmer for five more minutes
